Plus forty-odd bottles to drink in or carry out, a rotating draft cider, and a snack menu that begins and ends with very good bread.
The room
A marble bar, a turntable, and no wine list to memorise.
Sediment started as a Tuesday-night pop-up in a friend's gallery and never quite stopped. Today it's twenty-four seats, a slab of marble we rescued from a closing deli, and a wall of bottles arranged by feeling rather than region. The records are loud, the lighting is forgiving, and nobody will make you feel small for not knowing what "carbonic" means.
Everything we pour is low-intervention: organic or biodynamic farming, wild yeast, little to no added sulphur. Some of it is cloudy. All of it is alive.
